DOLMADES GIALANTZI
3 minced onions
1 1/2 cup olive oil
1 cup of rice
1 jar grape leaves
1/3 bunch of dill chopped
1/3 bunch of parsley chopped
2 tsp. mint
2 tsp. salt
1 lemon
-Wash the leaves
-Place all ingredients in a bowl except leaves
and half the oil and mix well
-Put a tsp. of mixture in one end of each leaf
and fold as follows
-Roll the end with the mixture twice, until is
covered
-Fold the two vertical ends inside and continue
rolling until done
-Line the bottom of a large pot with grape leaves
-Place layer of dolmades touching in pot next
to each other
-Add rest of olive oil
-Cover with water
-Place a dish over them
-Cover pot
-Let boil until water is absorbed
-Serve with egg lemon sauce
For first plate we offer
EGG LEMON FISH SOUP
1 big fish
2 onions chopped
4 carrots cut in slices
2 stalks of celery chopped
4 leaves of celery
3 large potatoes
1 cup olive oil
2 cups rice
4 eggs
1-2 lemons
1 tbs. butter
salt and pepper
-Clean and season the fish
-Heat the oil and saute onions
-Add fish, vegetables, salt and pepper
-Cover with water
-Simmer for an hour
-Add rice
-Simmer for 30 minutes
-Separate yolks from whites
-Whisk egg whites
-Beat yolks
-Add yolks to whites, add slowly add lemon juice
-Slowly add soup broth whisking constantly
-Return to pot
-Shake pot so that egg lemon mixture covers everything

MEAT BALLS IN EGG LEMON SAUCE
1 lb minced meat
4 slices of bread dipped in milk and squeezed dry
1 cup olive oil
1/3 bunch parsley chopped
1 chopped onion
1/8 cup rice
2 lemons
3 eggs
salt and pepper
-In a bowl mix all ingredients (only 1 egg of the 3), except oil and
lemon juice
-Mix well
-Form small balls
-Place them in a large pot
-Cover with water
-Add oil
-Simmer for one hour making sure that there is
plenty of broth remaining
-When done remove from heat
-Separate yolks from whites
-Beat yolks
-Beat egg whites to a stiff meringue
-Add yolks to meringue
-Add lemon juice
-Add the broth in a thin steady stream stirring
constantly
-Add the sauce to pot
-Shake pot so the sauce goes everywhere

BAKED LAMB IN OIL AND OREGANO
2 lbs lamb
1 cup olive oil
2 lemons
1 tbs. oregano
salt and pepper
-Season meat
-Sprinkle with oregano
-Place in baking pan and add lemon juice and oil

-If necessary add 1 cup of warm water

CHICKEN A LA GRECO
3 chicken cutlets
1 onion
3 peppers, different colors
3 fresh mushrooms
1 tomato
1 small glass wine
salt and pepper
1 tsp. oregano
2 tabs olive oil
-Cut chicken cutlets into small pieces
-Slice onion, mushrooms, tomato and peppers
-Heat olive oil
-Add chicken and stir
-Add vegetables and continue stirring for about
10 minutes more
-Add wine and season
-Simmer until all water is absorbed
Very typical Greece dish is
PASTITSIO
1 lb minced meat of beef
1 large onion
1/2 bunch of parsley chopped
1 can of chopped tomatoes
1 tbs. tomato paste
2 cloves of garlic chopped
1/2 cup olive oil
1 cup white wine
Salt and pepper to taste
5 balls of allspice
1 cinnamon stick
1 Bay leaf
1 pack spaghetti
4 tbs. butter
3 cups grated cheese
4 tbs. butter
6 tbs. flour
1 can evaporated milk
2 cups of water
1 tsp. nutmeg
1 egg yolk
salt and pepper
-Fill half way a large pot with water and bring to a boil
-Add spaghetti and stir every 5 minutes
-Let cook according packaging instructions
-Drain spaghetti
-Place butter in pot and let it melt
-Add some salt
-Saute spaghetti and remove from heat
-Place in a baking pan and sprinkle with half
the cheese
-Heat olive oil in a large saucepan over medium
heat
-Saute the onions and parsley until golden brown
-Add the meat into saucepan until white
-Add white wine
-Add tomatoes, cinnamon stick, bay leaf, all spices,
salt and pepper
-Let cook until all juices are absorbed
-Remove cinnamon stick
-Place meat on top of spaghetti and spread
-Melt rest of the butter p>-Warm the milk with
2 cups of water
-Add to butter, the flour and whisk
-Add slowly the warm milk and whisk at all times
-Add egg yolk and nutmeg
-Add half the remaining cheese
-Place sauce on top of meat and spread
-Sprinkle with the rest of cheese
-Bake in medium heat for 30 to 45 minutes

MELOMAKARONA
1 glass olive oil
1/2 glass sugar
1/2 glass beer
1/2 glass orange juice
1/2 glass milk
orange zest
3 glasses flour
1/4 cup brandy
1 tsp. baking powder
1 glass sugar
1 glass honey
1/2 glass water
chopped walnuts, sugar, cinnamon
-Preheat oven to 190 C or 300 F
-sift flour and add baking powder
-Beat oil until white
-Add sugar
-Add beer, brandy, milk, orange juice and zest
-Add flour little by little until dough is soft
and smooth
-Form melomakarona in longish balls
-Bake for 20-30 minutes
-Bring sugar, honey and water to a boil for 3
minutes
-Place 4 melomakarona at a time in pan with boiling
syrup and boil for 5 minutes
-Remove and sprinkle with walnuts, sugar and cinnamon

LOUKOUMADES
5 1/2 cups flour
1 tbs. yeast
1 cup lukewarm water (for yeast)
warm water ( the amount is according to how soft or firm the dough will
be)
1 tsp. salt
oil for frying
2 cups sugar
1 cup honey
1 cup water
cinnamon
-Sift flour and add salt
-Dissolve yeast to water and let rest 10-15 minutes
-make a hole in flour and pour yeast in it and
mix gently
-Whisk continuously adding warm water until a
soft sticky paste is formed
-Let dough rise and double in size
-Heat oil and drop 4-5 tbs. in it from batter
-When puffy and golden, remove and continue with
rest of batter
-Bring sugar, honey and water to a boil for 6-7
minutes
-Pour syrup over hot loukoumades
-Sprinkle with cinnamon
